
Best and Easiest Breakfast Casserole
This flavorful breakfast casserole is packed with savory turkey sausage, fluffy eggs, and melty cheese, all atop a buttery crescent roll crust. Perfect for busy mornings or a cozy brunch!
Ingredients:
- 1 lb (or less) turkey sausage
- 2 sprigs fresh rosemary (leaves only, stems discarded)
- Salt and pepper (to taste)
- 1 can refrigerated crescent roll dough
- 12 large eggs
- 1 package Tillamook shredded cheese (any variety you love)
- Non-stick cooking spray (optional)
Instructions:
- Cook the Sausage
- Heat a skillet over medium heat and cook the turkey sausage, breaking it into small pieces.
- Season with salt, pepper, and the rosemary leaves. Stir until fully cooked, then set aside.
- Prepare the Oven and Dish
- Preheat the oven to 350°F (175°C).
- Spray a casserole dish with non-stick cooking spray (optional).
- Assemble the Casserole
- Unroll the crescent roll dough and press it into the bottom of the casserole dish to form an even layer. Trim off any excess dough.
- Crack the eggs into a large bowl, season with salt and pepper, and whisk with a fork until blended.
- Layer the Ingredients
- Spread the cooked sausage evenly over the dough.
- Pour the whisked eggs over the sausage.
- Sprinkle the shredded cheese on top.
- Bake the Casserole
- Cover the dish with a lid or aluminum foil and bake for 25 minutes.
- Remove the cover and bake for an additional 15-25 minutes, or until the center is set and no longer jiggles when the pan is gently shaken. The cheese on top should be a little bit bubbly and starting to get a small hint of brown color.

- Let the casserole cool slightly before slicing. Makes about 8 generous portions.
